My chocolate journey

I have loved chocolate my entire life. Wherever I go, I buy chocolates and chocolate bars and try new flavors. When I tasted my first bean-to-bar chocolate in Ireland, it completely opened my eyes. I discovered that chocolate doesn't have to be just sweet or bitter, but can contain a multitude of flavor notes – similar to wine or craft coffee. 

This experience of honest bean-to-bar chocolate stayed with me, and in 2015 I founded the Míšina čokoláda brand and started producing my own chocolate.

Production of honest real chocolate

First, you import the best cocoa beans in the world, carefully sort them, roast them (different beans require different temperatures and roasting times), crush them, winnow them, and then grind them for several days in a melanger, a mill with a stone base and stone wheels. This is how you obtain cocoa mass. After aging, during which the flavor processes continue to develop, you heat the mass, cool it, and heat it again. This process is called tempering, and it is a kind of alchemy where every degree of temperature plays a role. Then you simply pour the melted tempered chocolate into molds and, after it hardens, tap it out and hand-wrap it. Well-tempered chocolate has a beautiful shine and snaps loudly when broken.

This method of production directly from cocoa beans is called bean-to-bar. Absolutely all products I offer in the e-shop are honestly made using this method. It is amazing how you can influence the taste of chocolate during this process. Such chocolate surprises us with a rich palette of flavor notes. It doesn't have to be bitter at all and can taste like fruit, caramel, or nuts. It has an intensive flavor and low sugar content.

Because I order the cocoa beans myself, I know which farms they come from and I pay fair prices for them. This is very important to me because child labor is used on some cocoa plantations. This is especially a problem in Ghana and Ivory Coast, where most cocoa beans used in mass production originate.

Awards at world competitions

Since 2017, Míšina čokoláda has already won more than 50 awards at prestigious international competitions, including several gold medals. As the first Czech chocolate in the history of the competition, it also received the highest award – three stars – at the world's most prestigious gourmet competition, the Great Taste Awards in England.

Three stars are awarded each year to less than 2% of all entered products! This award was won by the Sametová (Velvety) chocolate.

Three more of our chocolates won a gold medal at the prestigious world competition Academy of Chocolate Awards in London. We are the only Czech chocolate maker to have won a gold medal in the entire history of this competition.

Our chocolates win international awards repeatedly every year. Thanks to this, we know we are going in the right direction and maintaining the best possible quality and craftsmanship.

The judges positively evaluated the complexity of the bar, where various fruit notes gradually appear, with none dominating but rather complementing each other. A very balanced and harmonious chocolate. Long complex finish with floral notes and pleasant fruitiness.

2 stars were awarded in 2021 to Dark Chocolate Tanzania 100%. Smooth to creamy, complex and rich in flavor, fruity. It melts slowly on the tongue while other flavors appear, and the final rich fruitiness remains on the tongue long after the chocolate is gone. In 2020, this chocolate also won a gold medal at the world competition Academy of Chocolate Awards in London.

2 stars were awarded in 2021 to Milk Chocolate Solomon Islands 60% with goat milk. Creamy, complex and rich in flavor. A bar full of surprises. Pleasant notes of caramel and honey, complemented by the very delicate taste of goat milk.

First, an amazing aroma of roasted hazelnuts, followed by the taste of chocolate. It is not overly sweet. An extremely well-made product. It is dangerously good and we could eat a lot of it. 2 stars were awarded in 2020 to Milk Chocolate Madagascar 58.5% with blueberries. Delicate chocolate with a dark mahogany color and an amazingly fresh aroma of cocoa and fruit. The taste of blueberries beautifully complements the flavor notes of the cocoa beans. A very satisfying and unforgettable chocolate. In 2020, this chocolate also won a gold medal at the world competition Academy of Chocolate Awards in London.
