What is non-alkalized cocoa powder?
You may have come across the terms natural cocoa and Dutch cocoa. This is a difference in the processing process of cocoa powder. Non-alkalized (natural) cocoa powder has not undergone the alkalization process, i.e. it has not been treated with alkaline substances to reduce acidity. It thus retains its original light color, distinctive flavor and all valuable substances.

Natural (non-alkalized) cocoa: Lighter brown color and rich flavor and aroma. It does not contain any added substances. Thanks to gentle processing, all the beneficial antioxidants and minerals that cocoa naturally contains remain in it.

Alkalized (Dutch) cocoa: Darker color and less pronounced taste due to the addition of acidity regulators, such as potassium carbonate. Alkalization neutralizes acidity and improves solubility, but unfortunately also destroys a large part of the antioxidants and other beneficial substances in cocoa. Most cocoa from supermarkets is just alkalized.
