Dark or Bittersweet?
We say white, milk, and bittersweet chocolate. But is high-quality dark chocolate really bitter? Dark chocolate made from high-quality cocoa beans is not primarily bitter. However, if you use low-quality cocoa beans or over-roast the beans, bitterness occurs.
In high-quality dark chocolate, you will find many flavor notes; it is multi-layered, with different flavors at the beginning, middle, and end. Some dark chocolates taste like fruit, others like caramel or nuts. It depends on the variety of cocoa beans and the location (terroir).
It is interesting that in English, "white, milk and dark chocolate" is standard. In Czech, the term "hořká" (bittersweet/bitter) became established.
But do you know what I think? As customers increasingly encounter high-quality dark chocolate, the term "hořká čokoláda" (bittersweet chocolate) will change to "tmavá čokoláda" (dark chocolate) in Czech as well.
